Mini Mince Pies 

Ingredients: – 200g plain flour – 100g unsalted butter, chilled and diced – A pinch of salt – 2-3 tablespoons cold water – 200g mincemeat

Instructions: 1. Preheat your oven to 200°C (180°C fan) or gas mark 6. 2. In a large mixing bowl, rub the chilled diced butter into the flour until the mixture resembles fine breadcrumbs. You can do this by hand or with a food processor.

Add a pinch of salt and gradually add the cold water, mixing until the dough comes together. Be careful not to overwork the dough.

1. Roll out the pastry on a lightly floured surface until it's about 3mm thick. 2. Using a round cutter, cut out circles of pastry and gently press them into the holes of a mini muffin tin.

1. Place a teaspoon of mincemeat into each pastry case. 2. Use any leftover pastry to create lids for the pies. You can make them plain or use a smaller cutter to create decorative shapes.

1. Place the lids on top of the mincemeat filling and press the edges to seal. 2. Optionally, you can brush the tops of the pies with a little milk or beaten egg for a golden finish.

1. Bake in the preheated oven for 12-15 minutes, or until the pastry is golden brown. 2. Allow the mini mince pies to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
